My company puts on an annual conference for our users and I'm on the tech team so I always end up spending 2 weeks on site (setup, show, breakdown). We've done the conference 3 or 4 times in NOLA. Like you guys said, easy to find great food and great music. The people are overall really great, too.

Typically, yes but not all margarines are actually dairy free. Weird I know.

I have a big tub of standard crisco that I use when baking but only specifically pie crusts and a couple of cookie recipes. For the most part, it's all butter (or plant based butters for my dairy free child).

In a tech services type of role for the last 25 years, I have used the "ID ten T" trouble code plenty of times. I also have told them it's a "PEBKAC" issue.
