'Tis the season for clams on the coast!

While I'm not a professed clam-digger myself, the mighty mollusks have be appearing in the market more as of late. You would think this would be a good thing; I thought it was a good thing; I'm a big fan of clam chowder, New England style. Image




... till I took an inexpensive package of shelled clams home, thinking I would only have to steam them into submission. ...But no, they cooked but stayed 'chewy', very chewy.

Fresh clams, don't act this way; what do I have to do to shelled frozen ones to enjoy their iron-y goodness, folks?

Cooking them to long could be the problem...But if they are frozen and crap to start with they are going tobe crap whatever way you cook them. You did also say they were cheap!

Shellfish you are best off paying a little more for and I personally would go fresh over frozen anyday!

Mmmm Clam Chowder...now theres a recipe I need.
