Coconut Bread

Am trialling a new recipe.....Coconut Bread never had it never seen it on a menu! Any suggestions with what to serve it?

Anyone had it?

Never had it or heard of it before. Would it go with a good fish curry, or perhaps some bananas that have been caramalised?

I've only got two, maybe three: coconut, penicillin, and maybe bee venom. (All of which run in my family...a sip of a pina colada almost killed my aunt.)

Coconut bread was good I would serve it with some good lemon butter (lemon curd) and its deffo better toasted.

My wife really likes coconut so I would appreciate the recipe.

I would LOVE the recipe.

Coconut is a favourite fruit of mine. I use it and cherries (in the form of a Cherry Ripe) to get my two servings of fruit in a day.

half the cinnamon unless you really love the stuff it over powers the coconut. Also leave out to cool and the refridgerate if your going to toast it it makes it easier to slice....fab with lemon butter or ricotta cheese and honey, or grilled fresh pineapple...kinda like a chewable Pina Colada!

So all opinions back on Coconut Bread (my work colleagues are my lab rats) So it made the cut on the new menu!

Am off to bake some more and some lemon curd to have with it and make stuffing for the Roast Chook for dinner tonight!!

Any one else made it yet?
