Oatmeal and products containing oat bran are exellent at reducing cholesterol. However if you have a genetic predisposition to high cholesterol you could be facing an uphill battle. Definately manageable and cheese will most likely be something you will want to enjoy in moderation.
I expect to go straight to hell...........at least I won't have to spend time making new friends.

Funnily enough Miles, sat on my desk in front of me I have a kilo bag of "steel cut" oats. (aka "pinhead oats" ) :)

I've never tried this variation before, looking forward to using them soon.

Making this tonight, ready for tomorrow. "Perfect Porridge recipe".

You also need to eat more cold water fish. I think you take fish oil, but try eating the fish instead - replace cheese in your diet with the fish.

I adore cheese but its evil. I've come to try and view it more like a condiment : a little high quality with gorgeous flavor goes a long way. If I sit down to eat a piece of cheese, I try to limit myself to a 1-oz serving

You know, my one cousin (not by blood but by choice) died of pancreatic cancer. My other cousin (by blood and by choice) now has bladder cancer. Niether one has abused themselves as much as I have. Neither smoked and neither were what I would deem an alcoholic. I also have friends who are dealing with health issues and none of them have abused themselves anywhere near what I have put my body through. And yes, I do go to the doctor for regular physicals. Going for my yearly physical this January. So far my BP has been 110-120/60-80 and good cholestrol (HDL?) is very high and my bad cholestrol (LDL?) has been under whatever limit they come up with. Liver is great (go figure :loon ) and all other tests are fine.

One can never tell. I figure for me, do all in moderation (except drinking which I am not able to do in moderation) and all will work out.

As they say in the Highlander, "Do you want to live forever?"

KATE'S FISH STEW

Sauté in 3 tablespoons of olive oil, until soft:
1 large chopped onion
3 chopped cloves of garlic
3 chopped celery stalks
1 chopped scotch bonnet pepper (or habanero)
1 chopped leek

Add:
8 chopped tomatoes,
1 stick of lemongrass (bruised with the back of a knife
the grated zest of 1 lime
3 tablespoons of chopped parsley
1 tablespoon of chopped ginger
1 teaspoon of salt,
½ a teaspoon of pepper
2 cups of water.

Simmer for one hour. Check for seasoning.

Add:
1 pound of chopped chard
the juice of 1 lime

Simmer for ten minutes. Add 2 pounds of tilapia and simmer for 5 minutes.

Serve with crusty bread.

Another from my friend Kate.


KATE'S SALMON WITH BAY SHRIMP TOPPING

Put 4 salmon filets in a roasting pan.

Sprinkle on ¼ cup white wine and 2 tablespoons of lemon juice.

Mash together into a paste (she uses a great big marble mortar and pestle):
¼ cup of fresh dill
¼ cup of fresh parsley
1 teaspoon of salt
6 black peppercorns
the zest of 1 lemon
1 teaspoon of chopped fresh ginger
1 chopped shallot
¼ cup of olive oil into a paste.

Mix paste with 1 pound of bay shrimp and ¼ cup of breadcrumbs.

Top the salmon with the shrimp. Bake at 400F for 20 minutes.
Serves 6-8.

It's just a rather bland white fish. And unfortunately, not particularly high in the good Omegas, as mostly it's farmed. But the stew is really good! I haven't tried it with any other fish yet, but it will probably work for most any firm fleshed fish.

Try your local cusk eel. . . (who'd buy it if they called it that?) . . . I mean, "ling".

The kingklip is very easy to digest since it is a lean fish. Steaming or poaching is highly recommended by doctors because it’s a healthier choice as it maintains the low fat content of the fish. Apart from that, the kingklip fish is an excellent source of high quality protein, calcium, iodine and iron. Find your own recipe though - mine consists of going to "New York" restaurant on Second Avenue in Bloem and ordering their baked version.

Genypterus capensis

Other Names: Koningkilp, Baby kingklip

Kingklip (Genypterus capensis) is a member of the cuskeel family (Ophidiidae) and is endemic to Southern African waters. It is one of the most popular eating fish in South Africa and is of significant economic importance to South African fisheries. Kingklip stocks were heavily overfished in the 1980's, when they were exploited by an experimental longline fishery. Although this fishery has since closed and kingklip are now better managed as a bycatch in the offshore demersal trawl and longline fisheries, stocks have not yet recovered to their former abundance. Kingklip are a demersal (bottom-dwelling) species mainly found in offshore deepwater habitats from 50-550m and are known to inhabit hard ground and rocky areas that may be more vulnerable to trawl damage than unconsolidated habitats. They are relatively slow-growing and long-lived and cannot sustain intense targeted fishing pressure, which is why there is no targeted fishery for this species and they are currently managed as a bycatch species. Stocks are considered to be fully exploited.

There is also a similar, related species from New Zealand known as ling (Genypterus blacodes) which is also found on the South African market. Although Ling are often incorrectly marketed as kingklip, they are not caught in the same fisheries and therefore do not have the same environmental impact.
