Health Kicks Part II

The Health Kicks thread got me thinking about things that have changed in the typical mass-market supermarkets like Snakeway, Stater Bros. and Fred Meyers over the past 45+ years since the 1960s.

Going, going, or gone:

There used to be an entire wall of "Wonder Bread" which is now gone.

We used to see cardboard boxes of lard stacked up in the deli area.

Jars of pickled pigs feet were prominently displayed.

The margarine section has shrunk.

Grade B eggs. ('checked' eggs)

Packaged cow stomach and kidneys in the butcher section.

More is better and most is best:

A lot more and better produce, salad greens like arugula, sprouts of all kinds (sunflower, daikon, bean, alfalfa) jicama, fresh mangoes, fresh fruit year-round from 2 hemispheres, satsumas.

Better herbs and spices, too many to name, better hot sauces,

Artisanal breads.

Predictions:

Sugary drink/soda section is going to shrink or be replaced.

rubato--from what I recall, grade B eggs were just and nutritious and cheaper; did they disappear because of health concerns?

I can still find tripe and kidneys readily, but there appears to be more pork and poultry than beef in the butcher cases.

The one thing I think will increase are "better" convenience meals, given the much longer working times couples with families are facing; people are looking for better quality, and it's starting to come to the supermarkets.

The egg industry legislated them out of existence. Grade B eggs were just eggs with small cracks or flaws in the shells and the egg industry didn't like competing with themselves by selling a cheaper grade of eggs.

they are also the reason that egg sizing is as follows:

Marking .......... Actual Size
Medium = 10% smaller than the average egg size.
Large = The average size
Extra Large = 10% larger than the average weight egg.
Jumbo = 10% larger than Extra Large
