While I'm not a professed clam-digger myself, the mighty mollusks have be appearing in the market more as of late. You would think this would be a good thing; I thought it was a good thing; I'm a big fan of clam chowder, New England style.

... till I took an inexpensive package of shelled clams home, thinking I would only have to steam them into submission. ...But no, they cooked but stayed 'chewy', very chewy.
Fresh clams, don't act this way; what do I have to do to shelled frozen ones to enjoy their iron-y goodness, folks?
