This is purely a commercial decision. Eskimo Pie's parent company, Dreyer’s Grand Ice Cream, reckons it can make more money by calling it something other than "Eskimo Pie" and they're welcome to try. Why shouldn't they?

As long as you brought up the Minnesota Vikings, rubato, I thought I'd mention that the Minnesota Twins have removed a statue of former owner Calvin Griffith from the courtyard outside of Target Field. Griffith was the owner of what was then the Washington Senators when they relocated to the Twin Cities. In a series of remarks made at a meeting of the Lions Club of Waseca, MN in September 1978, he was quoted in the Minneapolis Tribune (now the Minneapolis StarTrib) the next day as saying that he moved the team from Washington to the Twin Cities "when I found out you only had 15,000 blacks here."
That comment was prompted by Griffith's response to a seemingly innocuous question from a Lion who wanted to know why Griffith had brought the old Washington Senators to Minnesota in 1961. Griffith responded by attacking sportswriters for suggesting the Twins might leave Minnesota someday.

Black people don't go to ball games, but they'll fill up a rassling [sic] ring and put up such a chant it'll scare you to death. It's unbelievable. We came here because you've got good, hard-working, white people here."

I honestly don't understand the dispute; this is a private company making a decision that, it believes, will generate continued sales of their product (and hopefully an increase in them). They can couch it in all the good intentions they want, but this iis an economic decision.
FWIW, I never considered "eskimo" to have any racism, but if inuits (or whatever other indigenous peoples) are offended by it, I see no reason to continue using it and offending them; I honestly can't understand why that term is so important to them that they would continue to use it and risk that offense--it's not like they're asking you to change your name. If I've used the word "eskimo" is the last year a dozen times, I'd be surprised--choosing to not use it is no real sacrifice.
