it was simply a purely delightful homage to the snail. Something that shouldn't be pooh-poohed unless tried.
The woodland tastes from Hesty's snails were immense and engaging.

I've had escargot many times. A nice vehicle for butter and garlic avec snail and some nice crusty french bread..
His prep adds nothing except oatmeal and ham. A classic "two fat ladies' wheeze. "ok we'll wrap this in bacon ... "

The delight in the product is its name as he pointed out. Heston's remit is to be fulsome to all senses. The name of the dish leads to preconceptions of the dish.
Hence yours, rubato.
I have eaten escargot many times. This dish is as different to those as it is to porridge.

I really like ecargot; any time we eat out somewhere that they have them, I usually order them.
I didn't think I was going to be crazy about this; with the name, I envisioned some sort of gruel that included pureed snails...
But if you look at the video, the name is a misnomer; the "porridge" is really just a sauce for the snails. It looks pretty tasty.
