So in anticipation of the new addition to our family and the possibility of a long distance job we've been looking at new cars. Err... really new small SUVs/crossovers so I won't have to bend over to get the kid out of the car. (back saving measure)

Fuck it I need to find a way to convince my dad to either buy or heavily finance a loaded Taurus SHO for me.

Living a little way out of town. Hey half the roads around here are still dirt.
We have a Pagero "Misinbisty" runs well on the rough and isn't to bad on the hyway.
7 seats and air con not bad as a kid transporter and work horse
I don't like the newer versions as all the little gadgets and the like just meen more useles things to stop working and cause other probles when your somewhere you can't get help
But the Jeep is just to much fun in the mud but only 4 seats and no roof not the best for small kids
Or the 1958 Bedford bus can seat 38 and has lots of leg room

I have always liked Fords. Though you don't want any car advice from me if mechanics is reflected in genetics.

What Crackpot needs is a car that is easy to get a baby capsule in and out of and is good for long distances.
OK Crackpot, we might end up with a completely different suggestions but answer the following questions:
1. What sort of distances do you anticipate driving on a weekly basis?
2. Will you be flat road driving, or are there mountains and tricky curvy bits that need negotiating?
3. Do you have any hobbies that require you to carry a LARGE amount of equipment?
4. Do you REALLY need 4WD capability?
5. No, do you really NEED it?
6. Do you need to transport animals regularly in it?
7. If you do, do you need them to be contained in the vehicle, (or is it just our cat which you can contain yourself)?
8. I am presuming that power steering, windows, air-con are standard. What 'luxuries' must your car have?
9. What are your favourite colours?
10. Does your wife wear heels when not pregnant?

If I get the job 500-600 miles a week much much less otherwise

Considering the expenses of raising a child, I'd buy the least expensive vehicle within your parameters.
