It’s an Irish dish that I somehow never heard of before:

Mashed potatoes with sautéed cabbage (or kale) mixed in, garnished with green onion and with a puddle of Irish butter in a well in the middle of the concoction.

I’m going to make it to accompany the corned beef I’ll be making for St. Patrick’s Day - even though I’ll have to sell my firstborn to afford the beef.

I haven’t been eating any beef for over a year, aside from the sausage and pepperoni on the occasional works pizza I order - so I had no idea how high the prices had jumped until I scoped out corned beef brisket prices at the market this week.

FWIW, BSG, most stores will offer a special sale price on corned beef brisket the closer you get to the week of St. Paddy's Day.

BSG stop by Mavis Winkle's in Twinsburg OH. 'swere I learned about colcannon. "We are not here for a long time but we are here for a good time" is their motto.

I'm excited to gear up for St George's Day (Apr 23) and some good old English cooking - boiled beef and carrots eh??? Eh??? What???? :shrug
