I always use the bacon the same way on chicken or turkey. It cuts back on the requirement of basting, and imparts a moistness to the meat.

Bacon, such a wonderful, versatile project.

That reminds I've got to pick up some extra; we're making a batch of romakis for appetizers for Thanksgiving...

I had forgotten to put that on my holiday grocery list...

One thing I've noticed about bacon though is that the price has really soared lately...

Yup. I always get nitrate-free, and at the grocery store its gotten crazy. Once a month a VT farm (all free-ranger, certified organic meats) comes down to my local organic farm, and you can pre-order some of their beautiful piggy goodness, but I've missed the last several months because I've been away or tried up during the 2 hours they are present. In context, the prices are not so bad, and the quality is superb!
