so..., i m cooking this rump roast....

....I ve rubbed it with seasonings, I ve given all six sides a good pan sear in my cast iron skillet ....

...and I ve put it on my broiling pan in the oven at 400 F and I ve set the timer at 2 hrs

the rump roast is about 6" x 5" x 3 1/2 or 4" and about 2 1/2 - 3 lbs. I would guess. (I ve disposed of the label already)

does this sound right? time-wise especially?

Only if you enjoy burned and dried-out meat. Turn the oven temperature down to 250 immediately and check for doneness at 45 minutes. Depending on your oven, total cooking time probably shouldn't be more than an hour, hour and a quarter.

well, I like the outside of a roast that way.... :)

thanks. it had cooked for 45 min at 400. I just opened the door, turned it down, and pulled the rack out (I had the rack one level too high too!)

it actually feels done. it isn t squishy at all, I get a nice bounce when I poke it (hee hee)

I didn t over-sear it. so I don t know. I m gonna go poke it again, it has rested for about 5 min. now...

wesw, I'm surprised you didn't point out that Sue's trying to make everyone eat their beef when it's still red. Or pinko at the most.

well, it turned out perfectly in the end. I left it in at 225 for about 15 more minutes. made a nice au jou from the drippings too!

a little on the rare side, but we like it that way....

Still you have to admit that it was cooked conservatively, time and temperature wise anyway.
