Joe make this!!!

My new favourite way of eating mar/veg/pro mite.

Irish soda bread

Ingredients

250g plain white flour
250g plain wholemeal flour
100g porridge oats
1 tsp bicarbonate of soda
1 tsp salt
25g butter , cut in pieces
500ml buttermilk


Method

Preheat the oven to 200C/gas 6/fan 180C and dust a baking sheet with flour. Mix the dry ingredients in a large bowl, then rub in the butter. Pour in the buttermilk and mix it in quickly with a table knife, then bring the dough together very lightly with your fingertips (handle it very, very gently). Now shape it into a flat, round loaf measuring 20cm/8in in diameter.

Put the loaf on the baking sheet and score a deep cross in the top. (Traditionally, this lets the fairies out, but it also helps the bread to cook through.) Bake for 30-35 minutes until the bottom of the loaf sounds hollow when tapped. If it isn't ready after this time, turn it upside down on the baking sheet and bake for a few minutes more.

Transfer to a wire rack, cover with a clean tea towel (this keeps the crust nice and soft) and leave to cool. To serve, break into quarters, then break or cut each quarter in half to make 8 wedges or slices - or simply slice across. Eat very fresh.

Two tips;
1) Use all wholemeal flour instead of half white half wholemeal.
2) Throw in a handful of crushed walnuts to the dry mix.

Cut thick slices, toast if wanted, cover with butter and the "mite" of your choice.

I'm knocking these out as fast as I can, they barely get a chance to cool before being wolfed down by the three of us.

Are porridge oats the same as oatmeal? I've never seen a box of porridge oats.

I just pulled this out of the oven.

I used your recipe. It's cooling off now and I'll be tasting it in a little while.

I don't know how it works for others, but if I right click on the picture and choose 'View Image' I see a much better picture.

I'll be getting back to you with my review on the flavor (with & without marmite spread).

Okay. I tasted the bread with & without Marmite.

I love the taste of this bread either way I have it but it's a great bread to spread Marmite on.

Again - on my computer, if I don't right click and choose 'View Image' I can't see the entire picture. And the entire picture is necessary in order to appreciate the entire picture... :D

Ha!! I'm in work, I brought in a quarter of soda bread and some peanut butter for me brekky! (Should have brought marmite too!)

Joe, watching a cookery show last week, we came upon this variation. Boy is it good!! I'm eating some now in fact.

It sounds very tasty and I want to try it. But I wish I didn't have to convert the measurements to American standards. My measuring instruments are based on cups & ounces.

It takes longer for me to convert the measurements than it takes to make the freakin' bread.
