I have to say, anyone who buys convenience packaged cheesy toast really needs to learn some very basic cooking skills. Cheesy toast is so simple and easy to make and so incredibly good with fresh ingredients - why go Stouffers?

I ate a lot of these when I was in College...

Quick, cheap, filing, no clean up, and reasonably tasty, (especially with a few crushed red peppers on top) it was perfectly serviceable limited budget, limited time, college student food...

Welsh rarebit?  Pretty snooty name for what is, when you get right down to it, just a variation on a grilled cheese sandwich.
(or as they were known in my family during my childhood when my mother made them, "cheese toasties".  I was raised Catholic in the days of meatless Fridays, so a dinner consisting of a couple of these paired with a bowl of Campbell's tomato soup found its way to our table several times a year.)

Of course, if you're going to charge $10 or more in a restaurant for this concoction, you'd have to give it a fancier name than "melted cheese on toast".

I’m no snob I assure you - I still buy Stouffer's when I’m craving Swedish meatballs but can’t be arsed to make them from scratch - but they take quite a bit of work and numerous ingredients, so while the scratch version is much better, it’s easy to settle for convenience.

In college housing we often don’t even have a proper toaster oven for cheese toasties, so I’ll forgive you. ;)

Except Welsh rarebit isn’t a grilled cheese sandwich. It’s an actual cheese sauce, typically with a béchamel base, and cheese, dry mustard, and wine or ale. Closer to fondue than grilled cheese. And totally yummy!

In fairness traditional Welsh rarebit is much more complicated than cheesy toast. I’ve never had it so can’t attest if it’s worth the extra effort. I love regular cheesy toast so much I don’t feel compelled to broaden my horizons. My occasional special indulgence is baked Camembert smeared on crusty warm roasted garlic batard.

This is the basic recipe I follow...
Welsh rarebit may be a simple dish, but if even Nigel Slater admits to a few failures, then it's certainly worth getting the basics right. This is my perfect version, but, using the same formula, play around with different kinds of cheeses and beers until you find one that would tempt you out of paradise. Because if heaven isn't toasted cheese, then I don't know what is.

1 tsp English mustard powder
3 tbsp stout
30g butter
Worcestershire sauce, to taste
175g lancashire cheese, grated
2 egg yolks
2 slices bread

1. Mix the mustard powder with a little stout in the bottom of a small pan to make a paste, then stir in the rest of the stout and add the butter and about 1 tsp Worcestershire sauce – you can always add more later if you like. Heat gently until the butter has melted.

2. Tip in the cheese and stir to melt, but do not let the mixture boil. Once smooth, taste for seasoning, then take off the heat and allow to cool until just slightly warm, being careful it doesn't solidify.

3. Pre-heat the grill to medium-high, and toast the bread on both sides. Beat the yolks into the warm cheese until smooth, and then spoon on to the toast and cook until bubbling and golden. Serve immediately.
