Aren't the prices you're paying a part of the problem?
Obviously we don't buy a lot of meat, but when entertaining Hen always buys meat from a good quality local butcher, normally this one, so she can trace the meat from origin all the way to her plate.

One thing you'll want to do with the recipe above is forget the chicken and tomatoes, and just toss chickpeas in the oil and spice mixture then roast them in the oven; makes a great side dish, or if you roast them til pretty much dry they are great for snacks.
There's a million recipes for pasta e ceci on line, you really can't go wrong with any of them. And there's always hummus, which I don't even use a recipe for, just grind a can or two of chickpeas with tahini, garlic, salt and lemon juice in a food processor, adding a little water and/or olive oil as needed. Depending on how much time/effort you want to put in, you can soak and grind dried chickpeas (don't use canned) to make falafel, or just start out with chickpea flour to make your own dried mix. Or just get a ready-made mix, all the ones I've tried (Osem, Baroody, Telma, Ziyad, Sadaf) have been perfectly adequate, once you get the hang of mixing to the right consistency/moisture level. I also like to throw chickpeas straight out of the can into a salat katzutz (Israeli salad), sometimes add some feta too. If you want to go more Subcontinental in flavor profile, there's a million recipes for chana masala on line, too.
