Oh that's just cruel...

When we were kids, growing up back in Wales, Gorgonzola cheese only existed in cartoons. I was about 16 before I found out there was more types of, and bloody lovely, cheese available than; "Tescos own brand mild cheddar type substance".

Must be where my cheese addiction started.

As a small child I enjoyed smashing piss ants with my thumb.

One day I inadvertantely got a whiff of the smell left on my thumb from samshing piss ants.

A while later I was given some Bleu Cheese (hidden in a salad) the taste was reminiscent of that smell.

Have never touched it since.

I still enjoy smashing piss ants though...

My guess is that the smell from the ants was formic acid (I remember this from the giant ant movie "THEM", see movies do teach some things). Formic acid often accompanies fermentation processes as a byproduct of the sugar metabolism/breakdown. It is not particularly toxic as i recall, and imparts a taste to the cheese.

For comparison, formic is the most simple of the organic acids--acetic acid, which adds another hydrocarbon grou, is the next, and is the compound which is diluted for table vinegar.

The Ant

The ant has made himself illustrious
Through constant industry industrious.
So what?
Would you be calm and placid
If you were full of formic acid?

Ok, as part of her prize for winning, Hatch is spending today truffle hunting with one of the region's top chefs.

She's bought herself a fetching pair of alligator print wellingtons (gum boots) for the event.

Let's hope she gets to bring some home with her.

While at Jamie Oliver's "15 Cornwall" restaurant in the UK, we had truffle and Parmesan risotto, which was mind blowing!

I have asked the hatch to see if she can take home a truffle that she ferrets out. (As long as she is sure it is a truffle and not a pig pellet.)
Bah!
